Sourced directly from a family-run mill in Piedmont, Italy, this organically grown 00 Flour is a well renowned favourite for making pizzas, pastas and bread. Both the taste and texture complements these classic dishes perfectly. Obtained without refining or bleaching but only with a special milling process of Italian organic white grain soft wheats. The gluten does not strengthen as much when liquid is added or when the dough is kneaded and the resulting dough is not as tough making Italian 00 flour particularly good for pasta dough.
Due to its texture and powdery consistency 00 flour is ideal for softer pasta shapes like tagliatelle and the best flour to use for ravioli as the subtle flavour doesn't detract from the yummy fillings. Try adding a squash and porcini mushroom filling with sage white sauce or go for a classic green pesto filling.
