Cacao butter is a pure, stable fat that is pressed out of the cacao bean. Its main use has been in the making of white chocolate and in chocolate bars however in recent years it has become a staple in many raw food diet desserts and sweets. As a raw food, cacao butter is rich in many antioxidants. Cacao butter holds together at room temperature so is perfect for creating a firm texture in many raw food desserts and because it has a mild chocolate taste and flavour so can be used in many desserts not just those that are cacao/chocolate based.
