Dark Agave syrup (or nectar) is a sweetener often used to substitute sugar and honey in beverages, savoury dishes, desserts, baked goods and raw food recipes. This Raw Agave syrup is extracted from the Wild Maguey cactus species, sustainably harvested in the Ixmiquilpan region of central Mexico by a Co-op of indigenous Hnahnu people. It is processed using a plant-based vegan certified organic enzyme that works in much the same way as the enzymatic process employed by bees to turn pollen into honey. A low temperature vacuum evaporator is used to concentrate the sugar. Most agave syrup is made by cooking the Blue Weber variety of cactus; however this Raw Agave is processed below 40 degrees Celsius. The only way in which it is refined is that excess moisture is removed from the juice of the plant to prevent fermentation. Unfiltered Agave syrup has a rich caramel flavour, a sweet earthy aroma and a thick luscious consistency.
