This colourful grain and rice mix is a nutrient-packed alternative to plain rice or grains; simply serve as you would rice or couscous, this makes a delicious accompaniment to curries, stews and hotpots and makes a great base for a vibrant salad or tabbouleh. To cook, rinse well under running water, then add to a saucepan with 2 and a half times as much water or stock (for one cup of rice mix, add 2 1/2 cups of water). Cover and bring to a simmer for 20-30 minutes before turning off the heat and leaving to stand for 10 minutes. Fluff with a fork before serving.
